Why we make it this way
We tested 41 blends before landing on 70/30 chuck to brisket. The brisket brings the fat, the chuck brings the beefiness, and the hard smash gives you a crust you can hear. The sauce is mayo, pickle brine, smoked paprika and one ingredient we will take to the grave.
